Coconut rice with mango and strawberries
We present a pleasant and exotic dessert with Thai origin: an oriental sweet which combines fresh coconut milk mixed with rice and colorful fruit.
The delicious contrast of warm rice, cold fruit and sweet-salty coconut sauce, creates a very enjoyable and special set... and the recipe could not be easier!
Ingredients (6-8 servings):
- 1 can coconut milk (preferably not light)
- 3/4 cups white sugar
- 1 teaspoon coarse salt
- 4 cups cooked sticky rice
- Fruit (for this recipe 1/4 of mango and 4 strawberries for 1 serving)
In a large saucepan on medium-high heat, combine coconut milk, sugar and salt. Mix until dissolved. As soon as the mixture begins to boil, remove from heat. Reserve 1/3-1/2 cups in a glass.
Pour remaining coconut sauce over cooked rice, cover and let sit for 10-20 minutes to absorb all the sauce.
On a plate, served two tablespoons of rice, decorate with sliced mango and strawberries, remaining coconut sauce and a pinch of coarse salt on top.
